Instructions
For the Ground Beef and Zucchini Stir-fry:
- In a large skillet, heat the olive oil over medium heat.
- Add the ground beef and cook until browned.
- Add the zucchini, onion, and bell pepper and cook until softened.
- Add the garlic powder, cumin, chili powder, salt, and pepper and cook for 1 minute more.
- Add the vegetable broth and bring to a boil.
- Reduce heat to low and simmer for 15 minutes, or until the zucchini is tender.
